Alternariol (AOH) is a toxic secondary metabolite produced by the Alternaria fungi, commonly found in various plant products, including fruits like mandarins, oranges, and berries. It is known for its genotoxic and mutagenic properties, which pose significant health risks. Alternariol functions by suppressing T cell proliferation and cytokine secretion, mildly promoting T cell apoptosis, thereby exhibiting anti-inflammatory activity. The molecular structure of alternariol includes a perylene quinone core, which contributes to its biological activity. The gene location and specific biosynthesis pathways of alternariol within the Alternaria species are still under investigation, with ongoing research focusing on its mechanism of action and potential therapeutic applications. Sensitive and selective analytical methods have been developed to detect alternariol in food products, highlighting its importance in food safety and public health.
