Carboxymethyl-lysine (CML) is a modified amino acid derivative that is formed during the Maillard reaction, a chemical reaction between amino acids and reducing sugars. Structurally, CML is formed by the addition of a carboxymethyl group to the lysine residue in proteins. The purpose of studying CML lies in its potential role as a biomarker for oxidative stress and the development of chronic diseases, such as diabetes, cardiovascular diseases, and aging-related conditions. Additionally, CML has been implicated in the pathogenesis of diabetic complications, such as nephropathy and retinopathy.
