Dimethyl yellow, also known as C.I. Solvent Yellow 2 or butter yellow, is a synthetic azo dye commonly used in industrial applications, particularly as a dye in histology and as a pH indicator. The chemical structure of dimethyl yellow consists of an azo linkage (-N=N-) connecting aromatic rings, typically imparting a yellow hue. Its primary function in various applications is to provide color; however, due to its potential health risks, it has been largely phased out of use in food and cosmetics. Concerns arise from its biotransformation into toxic aromatic amines, which have been identified as potential carcinogens.
