Soybean 7S globulin, also known as beta-conglycinin, is a major storage protein found in soybean seeds, accounting for a significant portion of the seed's total protein content. Structurally, it is characterized by its oligomeric assembly and dual subunit composition, forming a compact three-dimensional structure stabilized by inter- and intra-chain disulfide bridges. Functionally, 7S globulin is multifunctional, playing roles in stress response, antibacterial activity, and hormone receptor-like activity. It is not only a storage protein but also contributes to the plant's defense mechanisms. The protein is found in various plant species, with functional differences observed between legumes and non-leguminous plants. The extraction and study of its physicochemical properties have been explored using methods such as reverse micelle and alkali extraction-acid precipitation, revealing its hydrophobic and sulfur-containing amino acid composition.
