Azorubine, also known as E122, is a synthetic red azo dye commonly used in food products such as decorations, coatings, sauces, and beverages. It is authorized at varying concentrations depending on the food type, with a maximum permitted level of 500 mg/kg for certain foods and lower concentrations for beverages. Azorubine's molecular structure allows it to bind with proteins, potentially affecting their folding and leading to aggregation, which is a concern in the context of diseases like Alzheimer's. Furthermore, studies have shown that Azorubine can inhibit mild steel corrosion in acidic environments, indicating its potential use in industrial applications. The dye's interaction with other compounds, such as Bisphenol A, raises health concerns, particularly regarding embryonic development when present in ready-to-drink beverages.
