Diacetoxyscirpenol (DAS) is a type of trichothecene mycotoxin produced by various species of Fusarium fungi, commonly found in contaminated grains and cereals. Structurally, DAS features an epoxy-sesquiterpene backbone with two acetoxy groups, contributing to its high biological activity and toxicity. The primary mechanism of DAS involves inhibition of protein synthesis in eukaryotic cells by binding to ribosomes and disrupting translation processes, leading to cytotoxic effects and cell death. In agricultural contexts, DAS contamination poses significant health risks to both humans and animals, including immunosuppression and gastrointestinal disturbances following ingestion of affected food sources. Due to its potency, ongoing research focuses on developing effective detection methods and mitigation strategies in food safety to reduce exposure. Additionally, regulatory bodies have set guidelines and limits for acceptable DAS levels in food and feed products to safeguard public health.
