Sudan dyes are a group of synthetic azo dyes that are primarily used for industrial applications such as coloring oils, waxes, solvents, and plastics. These dyes are known for their vivid color properties, resulting from the azo group (-N=N-) that connects aromatic structures within their molecular composition. While Sudan dyes, such as Sudan I, II, III, and IV, impart intense red, yellow, and orange hues, their use in food products is prohibited in many countries due to potential health risks, including carcinogenicity and mutagenicity upon metabolic processing to aromatic amines. The presence of these dyes in food products, often illegally used to enhance color, has raised significant food safety concerns, leading to stringent monitoring and regulatory measures to prevent contamination. Research continues to focus on developing sensitive analytical methods for detecting traces of Sudan dyes in food matrices, aiming to ensure compliance with safety standards and protect consumer health.
