Enterotoxin E is a type of exotoxin produced by certain strains of Staphylococcus aureus, a bacterium commonly associated with food poisoning. This enterotoxin is part of a broader group of staphylococcal enterotoxins (SEs) that include enterotoxins A, B, C, D, and E, each responsible for triggering immune responses leading to gastroenteritis. Enterotoxin E, like its counterparts, is a heat-stable protein that can withstand cooking temperatures, making it a significant food safety concern when S. aureus contaminates food products. It functions by acting as a superantigen, binding directly to major histocompatibility complex (MHC) class II molecules on antigen-presenting cells and T-cell receptors, leading to massive T-cell activation and cytokine release independent of antigen specificity. This excessive immune activation causes symptoms such as vomiting and diarrhea typically within a few hours of ingestion. Enterotoxin E's heat resistance and potent biological activity necessitate rigorous food handling and hygiene practices to prevent staphylococcal food poisoning outbreaks.
